Ingredients

  • 1 can 15 oz canned chickpeas, drained and rinsed
  • 1 small onion finely chopped
  • 2 garlic cloves minced
  • 1/4 cup fresh parsley or cilantro chopped
  • 1/4 cup chickpea flour
  • 1 large egg
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 –2 tablespoons olive oil for brushing

Method

  1. Drain and rinse the chickpeas. Pat them dry with a paper towel.
  2. Place chickpeas in a bowl and mash with a fork. Keep some texture.
  3. Add onion, garlic, herbs, chickpea flour, egg, spices, salt, and pepper.
  4. Mix until everything sticks together.
  5. Shape the mixture into small patties, about 2 inches wide.
  6. Preheat the air fryer to 375°F (190°C).
  7. Place fritters in a single layer in the basket.
  8. Lightly brush the tops with olive oil.
  9. Air fry for 12–15 minutes, flipping halfway.
  10. Remove once golden and crisp. Let rest 1 minute before serving.

Notes

  • Dry chickpeas well to get crisp fritters.
  • Don’t overcrowd the air fryer. Cook in batches if needed.
  • For vegan fritters, replace the egg with a flax egg.
  • These reheat best in the air fryer, not the microwave.
