Toast Nuts and Seeds:
Heat a dry skillet over medium heat. Add almonds and sesame seeds, stirring constantly for 3–5 minutes until lightly golden and fragrant. Remove from heat.
Make Honey Glaze:
In a small saucepan, combine honey, brown sugar, butter, and a pinch of salt. Heat on low, stirring occasionally until sugar dissolves and mixture bubbles lightly.
Mix Nuts and Glaze:
Add toasted almonds, sesame seeds, and cinnamon to the honey glaze. Stir quickly to coat everything evenly.
Shape Clusters:
Line a baking sheet with parchment paper. Spoon small clusters of the mixture onto the sheet. Press gently to flatten slightly.
Cool and Serve:
Let clusters cool completely at room temperature. They will harden into crunchy bites. Store in an airtight container for up to a week.
