Ingredients

  • 1 cup whole almonds raw or lightly toasted
  • ½ cup sesame seeds white or golden
  • ¼ cup honey
  • 2 tbsp brown sugar
  • 1 tsp cinnamon optional
  • 1 tbsp butter
  • Pinch of salt
Optional: tiny chocolate chips or a few small cheese bites for variation

Method

  1. Toast Nuts and Seeds:
  2. Heat a dry skillet over medium heat. Add almonds and sesame seeds, stirring constantly for 3–5 minutes until lightly golden and fragrant. Remove from heat.
  3. Make Honey Glaze:
  4. In a small saucepan, combine honey, brown sugar, butter, and a pinch of salt. Heat on low, stirring occasionally until sugar dissolves and mixture bubbles lightly.
  5. Mix Nuts and Glaze:
  6. Add toasted almonds, sesame seeds, and cinnamon to the honey glaze. Stir quickly to coat everything evenly.
  7. Shape Clusters:
  8. Line a baking sheet with parchment paper. Spoon small clusters of the mixture onto the sheet. Press gently to flatten slightly.
  9. Cool and Serve:
  10. Let clusters cool completely at room temperature. They will harden into crunchy bites. Store in an airtight container for up to a week.

Notes

  • Use raw almonds for better flavor; pre-roasted nuts may not toast as evenly.
  • Be careful while cooking the honey glaze—it can burn quickly.
  • Optional add-ins like chocolate chips or tiny cheese bites can make your clusters sweet-salty or more indulgent.
  • Can be stored at room temperature in an airtight container or frozen for longer storage.
