Ingredients
  

  • 4 bone-in pork chops about 1-inch thick
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 medium apples Honeycrisp or Gala, cored and sliced
  • 1 small onion thinly sliced
  • 2 cloves garlic minced
  • ½ cup apple cider or apple juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh thyme leaves optional

Method
 

  1. Prepare Pork Chops: Pat the pork chops dry. Season both sides with salt, pepper, and smoked paprika.
  2. Sear the Pork: Heat olive oil in a large skillet over medium-high heat. Add pork chops and sear 3–4 minutes per side until golden brown. Remove from skillet.
  3. Cook Apples and Onions: Reduce heat to medium. Add butter to the skillet. Toss in apples and onions. Cook 4–5 minutes, stirring occasionally until softened and slightly caramelized. Add garlic in the last minute.
  4. Make Sauce: Pour in apple cider and stir in Dijon mustard. Scrape the skillet bottom to lift browned bits. Simmer 2–3 minutes until slightly thickened.
  5. Combine: Return pork chops to the skillet. Spoon sauce over the chops. Cook together for 3–4 more minutes. Sprinkle thyme on top if using.
  6. Serve: Plate pork chops with apples and onions. Pour extra sauce over the top. Enjoy with mashed potatoes, roasted veggies, or a simple salad.

  • Don’t overcook pork; internal temperature should reach 145°F (63°C).
  • Choose firm apples to keep texture while cooking.
  • You can use boneless pork chops, but adjust cooking time slightly.
  • This dish is best served immediately but can be reheated gently.
