Ingredients

  • 1 ripe avocado medium (about 150 g flesh); halved and pitted
  • 1 cucumber medium (about 300 g); chopped, peeled if waxed
  • 60 g baby spinach / 2 packed cups
  • 1 frozen banana medium (about 120 g); sliced
  • 240 ml unsweetened almond milk / 1 cup
  • 1 tbsp lime juice from about half a lime
  • 1 tbsp maple syrup adjust to taste
  • 8 fresh mint leaves to 10 leaves; optional
  • 1/2 cup ice cubes (about 4 cubes)
  • 1 pinch fine salt

Method

  1. Pour the almond milk, lime juice, maple syrup, and salt into a 1.5 L / 6-cup blender jar. Scoop in the avocado flesh, then add the chopped cucumber, spinach, and mint. Top with the frozen banana slices and ice.
  2. Blend on low for 15 seconds, then on high for 45 to 60 seconds, until the smoothie is completely smooth with no green flecks.
  3. Taste it. Add 1 tsp more maple syrup if it tastes flat, or a squeeze of lime if it tastes too mellow, then blend for 5 seconds. If it's too thick to pour, blend in 2 tbsp of almond milk.
  4. Pour into two tall glasses and drink right away, within 30 minutes, while it's thickest and brightest.

Notes

  • Freeze banana slices ahead so the smoothie turns out thick and cold.
  • Add liquid first and ice last to keep the blender from stalling.
  • Drink within 30 minutes for the brightest color and thickest texture.
  • Taste before pouring and adjust lime or maple syrup, since avocado ripeness varies.
