Ingredients

  • 1 medium ripe avocado, halved and pitted about 150 g flesh
  • 1 large ripe pear, cored and roughly chopped Bartlett or Anjou preferred
  • 1 cup fresh baby spinach loosely packed, about 30 g
  • 1 cup coconut water 240 ml, chilled
  • 1 tbsp fresh lemon juice from about half a lemon
  • 4 to 6 pieces ice cubes skip if using frozen fruit
  • 1 tsp honey or maple syrup optional, adjust to taste
  • 1 tsp fresh ginger, peeled optional, grated or thinly sliced

Method

  1. Add the baby spinach and coconut water to the blender. Blend on high for 20 to 30 seconds until the spinach is fully broken down and no leaf pieces remain.
  2. Scoop the avocado flesh into the blender. Add the chopped pear, lemon juice, and ginger if using.
  3. Add the ice cubes. Blend on high for 60 seconds until completely smooth and creamy, scraping down the sides once if needed.
  4. Taste and add honey or maple syrup if you'd like it sweeter. Blend for another 10 seconds to combine.
  5. Pour into two tall glasses and drink immediately, or seal in a jar with extra lemon juice and refrigerate for up to 24 hours.

Notes

For the greenest color and freshest flavor, drink this smoothie within 20 minutes of blending. If you're prepping it the night before, store in a sealed mason jar with plastic wrap pressed on the surface.
