Baked Buckwheat Granola Clusters with Honey and Almonds

Raw buckwheat groats, oats, and almonds get pressed into a slab, baked until golden, and broken into crunchy clusters bound with honey and coconut oil.

Ingredients
  

  • 1 cup raw buckwheat groats / 180 g
  • 1 cup rolled oats / 90 g; old-fashioned, not quick oats
  • 1/2 cup raw almonds / 60 g; roughly chopped
  • 1/4 cup pumpkin seeds / 35 g
  • 1 tsp ground cinnamon
  • 1/2 tsp fine sea salt
  • 1/3 cup honey / 80 ml
  • 1/4 cup coconut oil / 55 g; melted
  • 2 tbsp almond butter / 32 g
  • 1 tsp vanilla extract

Method
 

  1. Heat the oven to 150 C / 300 F. Line a 13 x 18-inch / 33 x 46 cm sheet pan with parchment paper, leaving overhang on the long sides.
  2. In a large mixing bowl, stir together the buckwheat groats, rolled oats, chopped almonds, pumpkin seeds, cinnamon, and salt.
  3. In a small saucepan over low heat, warm the honey, coconut oil, and almond butter together, whisking until smooth, about 2 minutes. Remove from heat and stir in the vanilla extract.
  4. Pour the warm honey mixture over the dry ingredients. Stir with a spatula until every piece is coated and no dry patches remain.
  5. Tip the mixture onto the lined sheet pan. Press it down firmly and evenly with the back of the spatula into a compact slab about 1 cm / 0.4 inch thick.
  6. Bake for 35 to 40 minutes, rotating the pan once halfway through, until the edges are deep golden brown and the center feels firm to the touch.
  7. Slide the pan onto a wire rack and let it cool completely, at least 1 hour, without touching it. Breaking it while warm turns clusters into crumbs.
  8. Once fully cool, lift the slab out using the parchment overhang and break it into clusters of whatever size you like.

Notes

  • Press mixture firmly into the pan for clusters, not crumbs.
  • Cool completely, at least 1 hour, before breaking apart.
  • Swap honey for maple syrup for a vegan batch.
  • Use parchment paper so the slab lifts out in one piece.
