Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
Prep the fish: Pat the tilapia fillets dry with a paper towel. Place them evenly on the baking sheet.
Make the herb mix: In a small bowl, combine olive oil, minced garlic, lemon zest, lemon juice, parsley, thyme, salt, and pepper.
Coat the fillets: Spoon the herb mixture evenly over each fillet. Optionally sprinkle a little grated parmesan on top for added flavor.
Bake for 12–15 minutes, or until the fish is opaque and flakes easily with a fork.
Serve hot, garnished with fresh lemon slices and extra parsley if desired.
