Ingredients

  • 4 tilapia fillets fresh or thawed
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 lemon zested and juiced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Optional: 2 tablespoons grated parmesan for extra flavor
  • Lemon slices for garnish

Method

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Prep the fish: Pat the tilapia fillets dry with a paper towel. Place them evenly on the baking sheet.
  3. Make the herb mix: In a small bowl, combine olive oil, minced garlic, lemon zest, lemon juice, parsley, thyme, salt, and pepper.
  4. Coat the fillets: Spoon the herb mixture evenly over each fillet. Optionally sprinkle a little grated parmesan on top for added flavor.
  5. Bake for 12–15 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Serve hot, garnished with fresh lemon slices and extra parsley if desired.

Notes

  • If using frozen tilapia, make sure it’s fully thawed and blotted dry before seasoning.
  • You can swap thyme with dill or oregano depending on what herbs you have.
  • Leftovers are best eaten within 1 day. Store in the fridge in an airtight container.
