Ingredients
  

  • 4 boneless skinless chicken breasts or thighs
  • 2 cups red or green grapes
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh thyme or rosemary
  • Salt and pepper to taste
Optional: 2 tablespoons red wine for richer flavor

Method
 

  1. Marinate the Chicken: In a bowl, mix balsamic vinegar, olive oil, garlic, thyme, salt, and pepper. Coat the chicken evenly. Let it sit for 30 minutes to 4 hours.
  2. Preheat Oven: Heat oven to 400°F (200°C).
  3. Prepare for Roasting: Place chicken on a baking sheet. Scatter grapes around the chicken. Drizzle a little olive oil over everything.
  4. Roast the Chicken: Bake for 25-30 minutes, depending on thickness. Toss grapes halfway through for even roasting.
  5. Check Doneness: Chicken is cooked when internal temperature reaches 165°F (74°C).
  6. Serve: Sprinkle fresh herbs on top. Pair with mashed potatoes, roasted vegetables, or a light salad.
