Ingredients

  • 2 cans young green jackfruit in brine drained and shredded
  • 1 cup barbecue sauce store-bought or homemade
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 6 –8 corn or flour tortillas
Toppings:
  • 1 avocado sliced
  • Fresh cilantro leaves
  • Lime wedges
Optional: vegan slaw or pickled onions

Method

  1. Prep the jackfruit: Cut off the core pieces and shred the jackfruit using your fingers or forks. You want stringy, pulled-pork-like strands.
  2. Cook aromatics: Heat olive oil in a skillet over medium heat. Add chopped onion and garlic. Sauté for 3–4 minutes until soft and fragrant.
  3. Add jackfruit: Stir in the shredded jackfruit. Add smoked paprika, chili powder, salt, and pepper. Cook for 5–7 minutes, letting it absorb the flavors.
  4. Add BBQ sauce: Pour in the barbecue sauce and stir until all strands are coated. Lower the heat and simmer for 10–12 minutes until the jackfruit is tender and saucy.
  5. Warm tortillas: Heat tortillas in a dry skillet or oven until soft and pliable.
  6. Assemble tacos: Spoon jackfruit mixture onto each tortilla. Top with avocado slices, cilantro, lime juice, and optional slaw. Serve immediately.

Notes

  • Use young green jackfruit for the best texture; ripe jackfruit will be too sweet.
  • Adjust spice levels by adding more chili powder or hot sauce.
  • Can be made ahead and stored in the fridge for 3–4 days. Reheat before serving.
  • Corn tortillas hold up better to juicy jackfruit, but flour tortillas are fine too.
