Ingredients
  

  • 1 medium head of cauliflower cut into florets
  • 2 medium leeks cleaned and sliced thinly (white and light green parts only)
  • 2 tablespoons unsalted butter or coconut cream for a dairy-free option
  • 1/4 cup cream cheese optional, for extra creaminess
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish

Method
 

  1. Steam or Boil Cauliflower: Steam cauliflower florets for 10–12 minutes until tender. You can also boil them, but steaming keeps them fluffy.
  2. Cook the Leeks: Melt butter or heat coconut cream in a pan over medium heat. Add sliced leeks and cook until soft and slightly caramelized, about 5–7 minutes.
  3. Mash Together: Add the cooked cauliflower to a food processor with leeks, cream cheese, garlic powder, salt, and pepper. Blend until smooth. For chunkier texture, mash by hand.
  4. Adjust Consistency: If you like it creamier, stir in a splash of milk, coconut milk, or more cream cheese.
  5. Serve: Transfer mash to a serving bowl. Sprinkle with chopped chives or parsley. Serve warm.

  • You can swap cream cheese for coconut cream to make it fully dairy-free.
  • Keep a few small cauliflower chunks if you like rustic texture.
