Steam or Boil Cauliflower: Steam cauliflower florets for 10–12 minutes until tender. You can also boil them, but steaming keeps them fluffy.
Cook the Leeks: Melt butter or heat coconut cream in a pan over medium heat. Add sliced leeks and cook until soft and slightly caramelized, about 5–7 minutes.
Mash Together: Add the cooked cauliflower to a food processor with leeks, cream cheese, garlic powder, salt, and pepper. Blend until smooth. For chunkier texture, mash by hand.
Adjust Consistency: If you like it creamier, stir in a splash of milk, coconut milk, or more cream cheese.
Serve: Transfer mash to a serving bowl. Sprinkle with chopped chives or parsley. Serve warm.
