- Boil cauliflower florets until tender, then squeeze out excess moisture.
- Mix cauliflower with ground chicken, breadcrumbs, parmesan, egg, garlic, onion powder, salt, and pepper.
- Shape mixture into small nuggets and place on a parchment-lined baking sheet.
- Bake at 400°F for 20-25 minutes, flipping halfway through, or fry for 3-4 minutes per side.
Notes
For extra crispy nuggets, bake on a wire rack instead of directly on the baking sheet. Freeze extras for future meals!
