Method
Mix the Dough
- Line a 23 x 33 cm / 9 x 13-inch sheet pan with parchment paper and set aside.
- In a large mixing bowl, stir the sunflower seed butter and honey together until smooth and glossy, about 1 minute.
- Add the rolled oats, ground flaxseed, chia seeds, vanilla extract, and salt. Stir until the mixture looks like a thick, sticky dough with no dry oats left at the bottom of the bowl.
- Fold in the mini chocolate chips.
- Let the dough rest for 5 minutes so the oats and chia seeds can soak up moisture. If it still sticks heavily to your hands after resting, add another tablespoon of oats.
Shape and Chill
- Scoop the dough using a tablespoon (about 28 g each) and roll it between your palms into a round ball.
- Set each round on the parchment-lined pan as you go. You should get about 20 rounds from this batch.
- Chill the rounds in the fridge for at least 30 minutes, until firm to the touch.
- Serve straight from the fridge, or let them sit at room temperature for 5 minutes if you like them softer.
Notes
- Use natural, no-stir sunflower seed butter for the smoothest dough.
- Dough turning green from sunflower seed butter is normal, not spoiled.
- Chill rounds at least 30 minutes before packing for lunchboxes.
- Old-fashioned oats hold texture better than quick oats here.
