Chilled Soba Noodle Salad Bowl with Avocado and Edamame

Ingredients
  

  • 200 g soba noodles dry
  • 150 g frozen shelled edamame
  • 2 avocado medium; ripe but firm, sliced
  • 1 cucumber medium; julienned or diced
  • 1 carrot medium; julienned
  • 2 scallions thinly sliced
  • 1 tbsp toasted sesame seeds
Sesame-Lime Dressing
  • 3 tbsp soy sauce or tamari for gluten-free
  • 2 tbsp toasted sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp lime juice fresh
  • 1 tbsp maple syrup
  • 1 clove garlic grated
  • 1 tsp fresh ginger grated
  • 1 pinch chili flakes optional

Method
 

Cook the Noodles
  1. Bring a 4-quart / 3.8 L pot of water to a boil over high heat. Add the soba noodles and cook for 4 to 5 minutes, stirring once, until just tender but still a little chewy.
  2. Add the frozen edamame to the pot for the last 2 minutes of cooking to thaw and warm through.
  3. Drain the noodles and edamame in a fine-mesh strainer, then rinse under cold water for 30 seconds to stop the cooking and wash off the starchy coating. Set aside to drain fully.
Make the Dressing
  1. Whisk the soy sauce, sesame oil, rice vinegar, lime juice, maple syrup, garlic, and ginger together in a small bowl until smooth. Add the chili flakes if using.
Assemble the Bowl
  1. Add the cooled noodles and edamame to a large mixing bowl with the cucumber, carrot, and half the scallions.
  2. Pour half the dressing over the noodles and toss gently with tongs or two forks, coating every strand.
  3. Divide the noodle mixture among four bowls. Top each with sliced avocado.
  4. Drizzle the remaining dressing over the avocado and noodles. Scatter the toasted sesame seeds and remaining scallions on top. Serve right away or chilled.

Notes

  • Rinse noodles immediately after draining to stop cooking and remove excess starch.
  • Keep avocado separate if prepping ahead; slice fresh before serving.
  • Use tamari instead of soy sauce for a gluten-free dressing.
  • Toast sesame seeds for extra flavor, about 2 minutes in a dry skillet.
