Ingredients

  • 1 cup unsweetened almond milk (240 ml)
  • 4 Medjool dates, pitted large (about 70 g); soak in warm water 5 minutes if firm
  • 2 tbsp raw almonds (18 g); or swap in 1 tbsp almond butter
  • 1 frozen banana, sliced small (about 100 g); optional, for a thicker texture
  • 1/2 tsp ground cinnamon
  • 1/4 tsp vanilla extract
  • 1 pinch fine salt
  • 1/2 cup ice cubes (about 6 cubes)

Method

Prep the Dates and Banana
  1. If your dates feel dry or stiff, soak them in warm water for 5 minutes, then drain. Skip this step if using soft Medjool dates.
  2. If using frozen banana, let it sit at room temperature for 2 minutes so the blender doesn't strain.
Blend the Smoothie
  1. Add almond milk, dates, banana, almonds (or almond butter), cinnamon, vanilla and salt to the blender.
  2. Blend on high for 45 to 60 seconds until completely smooth, with no date or almond bits visible.
  3. Add the ice cubes and blend again for 15 to 20 seconds until thick and frosty.
  4. Pour into glasses, dust with extra cinnamon if you like, and serve right away.

Notes

  • Soak dates first if they feel dry or stiff to the touch
  • Blend liquid and dates before adding ice for a smoother result
  • Use a frozen banana for a thicker, milkshake-like texture
  • Taste before serving, ripe dates vary a lot in sweetness
