Creamy Anti-Inflammatory Berry Walnut Overnight Oats

No-cook oats soaked overnight with chia, turmeric, and black pepper, topped with berries and walnuts for a make-ahead breakfast.

Ingredients
  

Oat Base
  • 120 g rolled oats old-fashioned, not instant
  • 24 g chia seeds (2 tbsp)
  • 14 g ground flaxseed (2 tbsp)
  • 1 tsp ground cinnamon
  • 1/2 tsp ground turmeric
  • 1 pinch black pepper boosts turmeric absorption
  • 1 pinch salt
  • 360 ml unsweetened almond milk
  • 120 g plain Greek yogurt
  • 40 g honey (2 tbsp); or maple syrup
  • 1 tsp vanilla extract
Toppings
  • 160 g mixed berries blueberries and sliced strawberries, fresh or thawed
  • 40 g walnuts roughly chopped

Method
 

  1. In a medium mixing bowl, whisk together the rolled oats, chia seeds, ground flaxseed, cinnamon, turmeric, black pepper, and salt.
  2. In a separate bowl or jar, whisk the almond milk, Greek yogurt, honey, and vanilla extract until smooth and no yogurt clumps remain.
  3. Pour the wet mixture into the dry ingredients and stir well, until no dry pockets of oats or chia are left.
  4. Divide the mixture evenly between two 250 ml / 8 oz jars, filling each about two-thirds full.
  5. Cover the jars and refrigerate for at least 6 hours, or overnight, until the oats are softened and the mixture is thick and spoonable.
  6. Before serving, stir each jar to loosen the oats. If it looks too thick, stir in a splash of extra milk.
  7. Top each jar with half the mixed berries and chopped walnuts. Drizzle with extra honey if you like, and eat cold straight from the fridge.

Notes

  • Chill jars at least 6 hours, overnight gives the best soft, spoonable texture.
  • Add berries and walnuts on top just before eating to keep their texture.
  • Double the dry mix and store it in a jar for faster batches next week.
  • Stir the yogurt in well, clumps of yogurt won't dissolve once chilled.
