Ingredients

  • 1 cup Unsweetened almond milk (240 ml)
  • 1/2 cup Plain yogurt (120 g); or coconut yogurt for dairy-free
  • 1 cup Frozen mixed berries (150 g)
  • 1 Ripe banana medium; fresh or frozen in chunks
  • 2 tbsp Baobab powder (14 g)
  • 1 tbsp Chia seeds
  • 1 tbsp Honey optional, to taste

Method

  1. Pour the almond milk and yogurt into the blender first, so the blades have liquid to grab onto.
  2. Add the banana, frozen mixed berries, and baobab powder.
  3. Blend on high for 30 to 45 seconds until smooth and no berry seeds crunch, scraping down the sides once if needed.
  4. Add the chia seeds and honey, then pulse for 5 to 10 seconds just to mix them in without fully liquefying the seeds.
  5. Check the texture. If it's too thick to pour, add another splash of almond milk and blend again. If it's too thin, add a few ice cubes and blend once more.
  6. Taste and stir in more honey if the berries turned out tart.
  7. Pour into two glasses and serve right away, before the chia seeds have time to settle.

Notes

  • Add baobab powder after the liquids so it doesn't clump against the blades
  • Use frozen berries straight from the freezer, no need to thaw first
  • Taste before sweetening, baobab and berries already bring natural tang
  • Drink within 24 hours if refrigerated, shake well before serving
