Ingredients
  

  • 2 cups plant-based milk almond, oat, or coconut
  • 2 tablespoons cornstarch
  • 2-3 tablespoons maple syrup or agave syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder optional for chocolate pudding

Method
 

  1. In a small bowl, mix cornstarch with a few tablespoons of plant-based milk until smooth.
  2. Heat remaining milk in a saucepan over medium heat with maple syrup.
  3. Gradually stir in the cornstarch slurry and cook until thickened.
  4. Add vanilla extract and cocoa powder (optional for chocolate flavor).
  5. Remove from heat and pour into serving dishes to cool.

Notes

Feel free to get creative with toppings like fresh fruit, nuts, or a drizzle of chocolate. You can also try making it chocolate-flavored by adding more cocoa powder!
