Creamy Pumpkin Spice Protein Smoothie with Almond Butter

Ingredients
  

  • 1 cup unsweetened almond milk / 240 ml
  • 1/2 cup canned pumpkin puree / 120 g; plain, not pie filling
  • 1 vanilla protein powder scoop / 30 g
  • 1/2 frozen banana medium, about 60 g
  • 1 tsp pumpkin pie spice
  • 1 tbsp almond butter optional
  • 1 tsp maple syrup or to taste
  • 1 cup ice cubes

Method
 

  1. Add the almond milk and canned pumpkin puree to the blender first so the blades have liquid to grab.
  2. Add the frozen banana, protein powder, pumpkin pie spice, almond butter, and maple syrup.
  3. Top with the ice cubes.
  4. Blend on high for 45 to 60 seconds, stopping once to scrape down the sides, until completely smooth with no protein powder flecks.
  5. Check the consistency. If it's too thick to pour, add a splash more almond milk and blend for 10 more seconds.
  6. Pour into a tall glass and dust with extra pumpkin pie spice if you like. Drink right away.

Notes

  • Use a frozen banana for thickness without diluting the pumpkin flavor.
  • Stick to canned pumpkin, never pie filling.
  • Blend on high for a full 45 to 60 seconds until completely smooth.
  • Start with 1 tsp pumpkin pie spice and adjust to taste.
