Crispy Pan-Fried High-Protein Chickpea Tuna Patties

Pan-fried patties made from canned tuna and mashed chickpeas, bound with egg and panko for a crispy, protein-packed bite.

Ingredients
  

  • 2 canned tuna in water, drained (5 oz / 142 g) cans; about 240 g drained, pressed dry
  • 1 canned chickpeas, drained and mashed (15 oz / 425 g) can; about 240 g drained
  • 1 egg large
  • 1/2 cup panko breadcrumbs (30 g)
  • 3 tbsp mayonnaise (45 g)
  • 1 tbsp dijon mustard (15 g)
  • 2 green onions, finely chopped (about 20 g)
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice (30 ml)
  • 2 tbsp fresh parsley, chopped (8 g)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For Frying
  • 3 tbsp olive oil divided

Method
 

Make the Patty Mixture
  1. Drain the canned tuna and chickpeas well, then press both between paper towels to remove as much liquid as possible. Wet mixture is the main reason patties fall apart later.
  2. Add the drained chickpeas to a large mixing bowl and mash with a fork until mostly smooth, leaving some texture.
  3. Add the tuna, egg, panko, mayonnaise, mustard, green onions, garlic, lemon juice, parsley, salt, and pepper. Mix with a fork just until combined, don't overmix or the patties turn dense.
Shape and Chill
  1. Divide the mixture into 8 equal portions, about 85 g each, and shape into patties roughly 8 cm / 3-inch wide and 2 cm thick.
  2. Arrange the patties on a sheet pan and chill in the fridge for 15 minutes. This firms the mixture so the patties hold together in the pan.
Pan-Fry the Patties
  1. Heat 1.5 tbsp of the olive oil in a 12-inch nonstick skillet over medium heat until it shimmers.
  2. Add 4 patties to the skillet, leaving space between each, and cook for 4 to 5 minutes until the bottom is golden brown.
  3. Flip each patty once with a fish spatula and cook for another 4 to 5 minutes, until golden and crisp on both sides and the internal temp reads 160°F / 71°C on an instant-read thermometer.
  4. Transfer the cooked patties to a plate lined with paper towel. Wipe out the skillet, add the remaining 1.5 tbsp oil, and repeat with the second batch of 4 patties.
Serve
  1. Serve the patties warm with lemon wedges or a dollop of yogurt dill sauce.

Notes

  • Press tuna and chickpeas dry before mixing to prevent soggy patties.
  • Chill patties 15 minutes minimum, a longer chill firms them further.
  • Cook in batches of 4 in a 12-inch skillet to avoid steaming.
  • Use a fish spatula for easier flipping without breaking the crust.
