Crispy Sweet Potato Toast with Avocado

Ingredients
  

For the sweet potato toast
  • 1 sweet potato large (about 300 g / 10 oz); scrubbed, ends trimmed
  • 1 tsp olive oil optional, for brushing
  • 1/4 tsp salt for seasoning slices
For the avocado topping
  • 1 ripe avocado (about 150 g)
  • 1 tbsp fresh lime juice
  • pinch salt for the avocado
  • 1/4 tsp red pepper flakes
  • 1 tsp everything bagel seasoning
  • pinch flaky sea salt to finish

Method
 

Prep the sweet potato
  1. Scrub the sweet potato and trim both ends. Slice it lengthwise into 4 planks, each about 1/4 inch (6mm) thick. Keep the slices as even as possible so they cook at the same rate.
  2. Brush both sides of each slice lightly with olive oil if using, then set them upright and ready to load into the toaster.
Toast the slices
  1. Load the sweet potato slices into the toaster and run it on the highest setting for 3 full cycles, about 9 to 12 minutes total. Let the toaster cool for a minute between cycles if it feels hot to the touch.
  2. Check doneness by sliding a fork into the thickest part of a slice. It should meet just a little resistance, not go in hard. If the outside browns before the center softens, transfer the slices to a 200C/400F oven for 5 to 8 minutes to finish.
  3. Season the warm slices with the 1/4 tsp salt right out of the toaster.
Make the smashed avocado
  1. While the sweet potato toasts, halve and pit the avocado. Scoop the flesh into a mixing bowl and mash with a fork, leaving a few small chunks.
  2. Stir in the lime juice and a pinch of salt until just combined.
Assemble and serve
  1. Spread the mashed avocado evenly over each warm sweet potato slice.
  2. Sprinkle with red pepper flakes and everything bagel seasoning. Finish with a pinch of flaky sea salt and serve right away.

Notes

  • Slice sweet potato lengthwise, not into rounds, for pieces long enough to fit the toaster slot.
  • Even 1/4 inch (6mm) thickness matters more than exact size here.
  • Don't skip the salt directly on the sweet potato, it needs seasoning underneath the avocado.
  • Have an oven backup ready if the toaster struggles to cook the center through.
