Crunchy Green Papaya Salad Bowl with Lime Dressing

Ingredients
  

Salad
  • 300 g green papaya, peeled and shredded unripe, firm
  • 1 carrot, shredded medium
  • 100 g cherry tomatoes, halved
  • 50 g green beans, trimmed and cut into 2-inch pieces
  • 40 g roasted peanuts, roughly chopped divided, for tossing and topping
Dressing
  • 2 garlic cloves peeled
  • 1 Thai bird's eye chilies to 2; adjust to taste
  • 3 tbsp lime juice, fresh
  • 2 tbsp fish sauce or soy sauce for vegan version
  • 1.5 tbsp palm sugar or light brown sugar

Method
 

Make the dressing
  1. In a mortar, pound the garlic and Thai chilies together until they break down into a rough paste.
  2. Add the palm sugar and pound briefly to dissolve it slightly into the garlic-chili paste.
  3. Stir in the lime juice and fish sauce, then set the mortar aside so the flavors combine.
Build the salad
  1. Add the green beans and half the cherry tomatoes to the mortar. Bruise them gently with the pestle for about 30 seconds, just enough to soften slightly, not pulverize.
  2. Add the shredded green papaya and carrot to the mortar in two batches, pounding and turning with a spoon between batches so the dressing coats everything evenly.
  3. Toss in the remaining tomatoes and half the peanuts, mixing gently by hand or with tongs until everything is coated.
  4. Taste and adjust, adding more lime for tang, sugar for sweetness, or fish sauce for salt until it's balanced.
  5. Transfer to a serving bowl and scatter the remaining peanuts on top. Serve right away while everything is still crisp.

Notes

  • Use a mortar and pestle if you have one, it bruises the vegetables just enough to release flavor.
  • Taste and adjust the dressing before adding peanuts, it's easier to fix balance early.
  • Don't dress the salad until right before eating, the papaya softens fast once it sits in lime juice.
  • Keep chili seeds in for more heat, remove them for a milder bowl the kids will actually eat.
