Ingredients
  

Slaw
  • 600 g broccoli florets, finely chopped about 2 large heads
  • 6 slices bacon (about 170 g); raw
  • 60 g red onion, finely diced
  • 150 g sharp cheddar, shredded about 1 1/2 cups
  • 60 g sunflower seeds about 1/3 cup
Dressing
  • 75 g mayonnaise about 1/3 cup
  • 1.5 tbsp apple cider vinegar
  • 1 tbsp dijon mustard
  • 2 tbsp granulated erythritol or other keto sweetener
  • 1/2 tsp garlic powder
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper

Method
 

  1. Cook the bacon in a 12-inch skillet over medium heat for 8 to 10 minutes, flipping once, until deep brown and crisp.
  2. Drain the bacon on paper towels, then crumble it into small pieces once it's cool enough to handle.
  3. Chop the broccoli florets fine, almost rice-sized, using a chef's knife or a food processor pulsed a few times.
  4. Add the chopped broccoli, diced red onion, shredded cheddar, sunflower seeds, and crumbled bacon to a large mixing bowl.
  5. In a small mixing bowl, whisk together the mayonnaise, apple cider vinegar, dijon mustard, erythritol, garlic powder, salt, and pepper until smooth.
  6. Pour the dressing over the broccoli mixture and toss well with a spoon until every piece is coated.
  7. Cover and chill for at least 15 minutes to let the flavors settle before serving. Taste and adjust salt if needed.
  8. Toss once more just before serving and top with any extra bacon crumbles.

Notes

  • Pat chopped broccoli dry before mixing to avoid a watery dressing.
  • Crumble bacon while it's still warm so it stays crisp.
  • Taste the dressing before tossing, add more vinegar if you want more tang.
  • Chill at least 15 minutes so the flavors settle before serving.
