Ingredients
  

  • 2 medium cucumbers
  • 1 ripe avocado
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon fresh lemon juice
  • Salt and pepper to taste
Optional toppings: cherry tomato halves, fresh herbs (dill, parsley, or cilantro), crushed nuts

Method
 

  1. Step 1: Prepare the Cucumbers
  2. Wash cucumbers and slice into 1–1.5 inch thick rounds.
  3. Scoop out the center with a small spoon or melon baller, leaving the bottom intact to form a cup.
  4. Step 2: Mash the Avocado
  5. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
  6. Mash with a fork until smooth.
  7. Add lemon juice, a pinch of salt, and a dash of pepper.
  8. Step 3: Mix Yogurt and Avocado
  9. Combine the mashed avocado with Greek yogurt. Stir until creamy and smooth.
  10. Step 4: Fill the Cups
  11. Spoon the avocado-yogurt mixture into each cucumber cup.
  12. Add optional toppings like cherry tomato halves, fresh herbs, or crushed nuts.
  13. Step 5: Serve
