Method
- Add almonds and oats to a food processor. Blend until coarse and crumbly.
- Add the dates. Blend again until the mix holds together when pressed.
- Add peanut butter, vanilla, salt, and chia seeds. Blend until fully mixed. The dough should be sticky but firm.
- Line an 8x8-inch pan with parchment paper. Press the mixture evenly into the pan.
- Chill in the fridge for 1–2 hours.
- Slice into bars and enjoy.
Notes
- If your dates feel dry, soak them in warm water for 10 minutes first.
- These bars store well in the fridge for up to 2 weeks or in the freezer for up to 3 months.
- For extra flavor, drizzle melted dark chocolate on top before chilling.
