Ingredients
  

  • 1 cup frozen dragon fruit pink pitaya, cubed
  • ¾ cup full-fat coconut milk
  • ¼ cup coconut water
  • ½ cup frozen pineapple chunks
  • Juice of ½ fresh lime
  • Optional for protein or thickness:
  • 1 scoop plant-based protein powder
  • ½ frozen banana

Method
 

  1. Pour the coconut milk and coconut water into a blender.
  2. Add the frozen dragon fruit and frozen pineapple.
  3. Squeeze in the fresh lime juice.
  4. Add protein powder or banana if using.
  5. Blend until thick and smooth.
  6. Stop once to scrape the sides if needed.
  7. Pour into a glass and serve right away.

Notes

  • Always use frozen dragon fruit. Fresh fruit makes the smoothie thin.
  • Full-fat coconut milk gives the best creamy texture.
  • If the smoothie is too thick, add 1–2 tablespoons of coconut water.
  • Drink it fresh. The color fades if it sits too long.
