Easy Butter Bean and Kale Stew with Smoked Paprika

Ingredients
  

  • 2 tbsp olive oil
  • 1 yellow onion medium; diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cloves garlic minced
  • 1.5 tsp smoked paprika
  • 1/4 tsp red pepper flakes optional
  • 400 g canned diced tomatoes / 14 oz can
  • 3 cups vegetable broth / 720 ml; low-sodium
  • 2 canned butter beans x 400 g / 15 oz cans; drained and rinsed
  • 1 bay leaf
  • 4 cups kale / 120 g; stemmed and chopped
  • 1 tbsp lemon juice fresh
  • salt to taste
  • black pepper to taste
  • 4 tbsp grated parmesan optional, for serving, swap for nutritional yeast if vegan
  • 4 slices crusty bread optional, for serving

Method
 

  1. Heat the olive oil in a 5-quart / 4.7 L Dutch oven over medium heat. Add the onion, carrots, and celery and cook for 6 to 7 minutes, stirring often, until softened.
  2. Add the garlic, smoked paprika, and red pepper flakes. Cook for 1 minute, stirring constantly, until fragrant.
  3. Stir in the diced tomatoes, vegetable broth, drained butter beans, and bay leaf. Bring the pot to a simmer.
  4. Reduce the heat to medium-low, partially cover, and simmer for 15 to 18 minutes until the vegetables are tender and the broth has reduced slightly.
  5. Uncover and stir in the kale in batches, letting each addition wilt down before adding more. Simmer for 3 to 5 minutes until the kale is wilted but still bright green.
  6. Remove the bay leaf. Stir in the lemon juice, then season with salt and pepper to taste.
  7. Ladle into bowls and top with grated parmesan. Serve with crusty bread on the side.

Notes

  • Use full-sized cans, not the small 8 oz size, for enough beans.
  • Simmer uncovered near the end to thicken the broth properly.
  • Chop kale into bite-sized pieces so it wilts evenly.
  • Bay leaf infuses flavor as it simmers, remove before serving.
