Easy Guava Lime Refresher Smoothie with Coconut Water

Ingredients
  

  • 2 cups ripe guava, peeled and chopped / 300 g; or 1 1/2 cups guava puree
  • 1 cup coconut water / 240 ml
  • 1 ripe banana, sliced and frozen small
  • 2 tbsp fresh lime juice about 1 lime
  • 1 tsp lime zest
  • 1 tbsp honey plus more to taste
  • 1 cup ice cubes / 150 g
  • fresh mint leaves a few sprigs; for garnish

Method
 

  1. Peel and roughly chop the guava, about 2 cups / 300 g, discarding any tough core pieces.
  2. If you want a smooth drink, blend the guava alone for about 20 seconds, then push it through a fine-mesh sieve into a bowl to remove the seeds. Skip this step if you don't mind texture.
  3. Add the strained (or chopped) guava to the blender along with the coconut water, lime juice, lime zest, and frozen banana.
  4. Blend on high for 45 to 60 seconds until completely smooth and no chunks remain.
  5. Taste the mixture. If the guava was tart, add the honey and blend for 5 more seconds to combine.
  6. Add the ice cubes and blend again for 20 to 30 seconds until the smoothie turns pale pink and frosty.
  7. Pour into two glasses.
  8. Garnish with fresh mint leaves and serve right away while it's cold.

Notes

  • Freeze the banana the night before for a colder, thicker smoothie.
  • Strain the guava if seeds bother you, skip it if they don't.
  • Taste the guava before adding honey, ripeness varies a lot batch to batch.
  • Drink it right away, it separates fast once it sits.
