Fresh Avocado Bean and Sweetcorn Salad with Lime Juice

A no-cook salad of avocado, black beans, corn, and tomatoes tossed in a bright lime and cumin dressing, ready in 15 minutes.

Ingredients
  

  • 2 ripe avocados, diced about 400 g total
  • 1 can black beans (425 g / 15 oz); drained and rinsed
  • 1 1/2 cups sweetcorn kernels fresh, canned, or thawed frozen, about 230 g
  • 1/2 red onion, finely diced small; about 60 g
  • 1 cup cherry tomatoes, halved about 150 g
  • 1 jalapeno, seeded and minced optional
  • 1/4 cup fresh cilantro, chopped
  • 3 tbsp fresh lime juice about 2 limes
  • 2 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup crumbled feta cheese optional, about 50 g

Method
 

Prep the salad
  1. If using fresh corn, bring a pot of water to a boil and cook 2 ears for 4 minutes until bright yellow and tender. Cool, then cut the kernels from the cob. Skip this step if using canned or thawed frozen corn.
  2. Drain and rinse the black beans under cold water and shake off excess liquid. Add to a 3-quart / 2.8L mixing bowl.
  3. Dice the avocados, halve the cherry tomatoes, and finely dice the red onion. Add all to the bowl along with the corn, jalapeno, and cilantro.
Dress and serve
  1. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper until combined.
  2. Pour the dressing over the salad and toss gently with a large spoon, turning from the bottom up so the avocado doesn't mash.
  3. Taste and add more lime juice or salt if needed.
  4. Sprinkle the feta over the top if using. Serve right away, or chill for up to 1 hour before serving.

Notes

  • Don't dress the salad more than 1 hour before serving.
  • Rinse canned beans and corn well before adding.
  • Add avocado last, right before serving.
  • Prep components ahead, but combine avocado just before eating.
