These fruit and nut energy clusters are quick, no-bake snacks made with nuts, seeds, dried fruit, and a touch of dark chocolate. They’re chewy, crunchy, and great for busy days, lunch boxes, or a fast treat straight from the fridge.

Ingredients
  

  • 1 cup almonds roughly chopped
  • ½ cup cashews
  • cup pumpkin seeds
  • ½ cup dried cranberries
  • ½ cup dried apricots chopped
  • ¼ cup shredded coconut
  • ½ cup dark chocolate chips or chopped dark chocolate bar
  • 1 tablespoon coconut oil
  • Pinch of flaky salt

Method
 

Mix the dry ingredients.
  1. Add almonds, cashews, pumpkin seeds, cranberries, apricots, and coconut to a bowl. Stir so everything is evenly mixed.
Melt the chocolate.
  1. Place the dark chocolate chips and coconut oil in a microwave-safe bowl. Heat in short bursts, stirring until smooth and shiny.
Combine everything.
  1. Pour the melted chocolate over the bowl of nuts and fruit. Mix until everything is lightly coated and sticking together.
Form the clusters.
  1. Scoop spoonfuls of the mixture onto a baking sheet lined with parchment paper. They don’t need to be perfect—small rounded mounds are fine.
Chill.
  1. Place the tray in the fridge for 20–25 minutes or until the clusters are firm.
Serve or store.
  1. Keep the clusters in an airtight container in the fridge for up to a week.

Notes

These clusters work with almost any dried fruit or nut you already have. If the mixture feels too dry, stir in a tiny bit more melted chocolate. For a deeper flavor, toast the nuts before mixing them in. Keep the clusters small so they hold their shape better.
