Fudgy Black Bean Brownie Bites (High-Protein Snack)

Fudgy, oven-baked brownie bites made with black beans, oats, and protein powder instead of flour, ready in about 36 minutes.

Ingredients
  

  • 250 g black beans, canned, drained and rinsed (about 1.5 cups)
  • 32 g creamy peanut butter (2 tbsp)
  • 25 g unsweetened cocoa powder (1/4 cup)
  • 80 g maple syrup (1/3 cup)
  • 1 egg large
  • 1/2 tsp vanilla extract
  • 45 g rolled oats (1/2 cup)
  • 60 g vanilla protein powder (1/2 cup)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 60 g mini chocolate chips (1/3 cup), plus extra for topping

Method
 

  1. Preheat the oven to 175 C / 350 F. Grease a 24-cavity mini muffin tin or line 18 cavities with silicone liners.
  2. Add the black beans, peanut butter, cocoa powder, maple syrup, egg, and vanilla extract to a food processor. Blend for about 1 minute, scraping down the sides, until completely smooth with no visible bean pieces.
  3. Add the oats, protein powder, baking powder, and salt to the processor. Pulse 5 to 6 times until just combined, the batter should look thick and glossy, like brownie batter.
  4. Fold in the mini chocolate chips by hand with a rubber spatula.
  5. Spoon about 1 tbsp of batter into each muffin cavity, filling two-thirds full. This should give you about 18 bites.
  6. Scatter a few extra chocolate chips on top of each one, pressing gently.
  7. Bake for 15 to 18 minutes, until the tops look set and a toothpick comes out with a few moist crumbs, not wet batter.
  8. Cool the bites in the tin for 10 minutes, then transfer to a wire rack to cool completely before storing.

Notes

  • Blend beans alone first before adding other wet ingredients for the smoothest batter.
  • Mini muffin tins give the best fudgy-to-edge ratio, standard tins need longer bake time.
  • Batter should look thick and glossy, similar to brownie batter, not runny.
  • Don't skip the salt, it cuts the sweetness from the maple syrup and chocolate chips.
