Ingredients
  

  • 2 pounds sweet potatoes peeled and cubed
  • 4 cloves roasted garlic mashed
  • 3 tablespoons unsalted butter
  • ¼ cup milk or cream adjust for desired creaminess
  • 2 teaspoons fresh thyme or rosemary chopped
  • Salt and black pepper to taste

  • Sprinkle of Parmesan

Method
 

  1. Prep the sweet potatoes: Peel and cut sweet potatoes into even cubes. This helps them cook evenly.
  2. Boil or steam: Place cubed sweet potatoes in a large pot with water. Bring to a boil, then simmer until soft (15–20 minutes). Alternatively, steam them.
  3. Roast the garlic: Wrap garlic cloves in foil, drizzle with olive oil, bake at 400°F for 20 minutes until soft.
  4. Mash: Drain the potatoes, return them to the pot, add butter, roasted garlic, and milk or cream. Mash until smooth.
  5. Add herbs and seasoning: Stir in chopped thyme or rosemary. Season with salt and pepper to taste.
  6. Serve: Transfer to a bowl, sprinkle extra herbs on top, and serve warm.

  • Warm milk or cream before adding to the mash for extra creaminess.
