Ingredients
  

  • 1 cup frozen mango chunks
  • 1/2 banana
  • 1 tablespoon dried goji berries
  • 3/4 cup plant-based milk almond, oat, or cashew
  • 1 teaspoon lemon juice
  • Optional:
  • 1 tablespoon chia seeds
  • 1/2 teaspoon grated ginger
  • A splash of vanilla extract
  • A few ice cubes

Method
 

  1. If desired, soak the dried goji berries in warm water for 5 minutes to soften.
  2. Pour plant-based milk into a blender.
  3. Add frozen mango, banana, and goji berries.
  4. Add lemon juice and any optional ingredients you like.
  5. Blend until smooth and creamy.
  6. Taste and adjust sweetness or thickness if needed (add more milk to thin, more mango to thicken).
  7. Pour into a glass and enjoy immediately. Optionally, garnish with extra goji berries or a slice of mango.

Notes

  • You can use fresh mango instead of frozen if preferred; add ice for chill.
  • For a creamier texture, use half a small avocado or extra banana.
  • Adjust goji berries to taste; they are slightly tangy and chewy.
  • Works well as a make-ahead smoothie if stored in a sealed jar for up to 24 hours.
