Method
- If desired, soak the dried goji berries in warm water for 5 minutes to soften.
- Pour plant-based milk into a blender.
- Add frozen mango, banana, and goji berries.
- Add lemon juice and any optional ingredients you like.
- Blend until smooth and creamy.
- Taste and adjust sweetness or thickness if needed (add more milk to thin, more mango to thicken).
- Pour into a glass and enjoy immediately. Optionally, garnish with extra goji berries or a slice of mango.
Notes
- You can use fresh mango instead of frozen if preferred; add ice for chill.
- For a creamier texture, use half a small avocado or extra banana.
- Adjust goji berries to taste; they are slightly tangy and chewy.
- Works well as a make-ahead smoothie if stored in a sealed jar for up to 24 hours.
