  • ¾ cup cooked brown rice or substitute with quinoa
  • 2 tablespoons dried goji berries soaked in warm water for 10–15 minutes
  • ½ avocado sliced
  • ½ cup shredded carrots
  • ¼ cup steamed edamame
  • 2 tablespoons red cabbage thinly sliced
  • 2 tablespoons cucumber diced
  • 1 tablespoon pickled red onion
  • 1 tablespoon roasted almonds chopped
For the Dressing:
  • 1 tablespoon olive oil
  • 1 teaspoon rice vinegar
  • ½ teaspoon sesame oil
  • 1 teaspoon soy sauce or tamari for gluten-free
  • 1 teaspoon maple syrup or honey
  • ¼ teaspoon grated fresh ginger
  • Salt and pepper to taste

Method
 

Soak the Goji Berries
  1. Put goji berries in a bowl with warm water. Let them sit for 10–15 minutes, then drain.
Prepare the Base
  1. Add warm, cooked brown rice to a serving bowl.
Add Toppings
  1. Arrange the carrots, edamame, red cabbage, cucumber, and pickled red onion around the rice.
Add Goji Berries and Avocado
  1. Scatter the softened goji berries over the bowl. Add sliced avocado on top.
Add Crunch
  1. Sprinkle roasted almonds over the bowl for texture.
Make the Dressing
  1. Whisk or shake all dressing ingredients in a small jar.
Serve
  1. Drizzle the dressing over the bowl just before eating.
