Ingredients
  

  • 2 slices of bread ciabatta, sourdough, or your choice
  • 1/2 cup of grilled vegetables zucchini, bell peppers, eggplant, mushrooms
  • 2 tablespoons of pesto or hummus
  • 1/4 cup of cheese mozzarella, goat cheese, or vegan cheese
  • 1 tablespoon olive oil for grilling
  • Salt and pepper to taste

Method
 

  1. Preheat your panini press or skillet.
  2. Brush one side of the bread slices with olive oil.
  3. Spread pesto or hummus on the other side.
  4. Layer with grilled vegetables and cheese.
  5. Place the bread slices together, oil-side out, and grill until golden brown and crispy (about 3-5 minutes).
  6. Slice and serve!
