High Protein Bison Chili

This bison chili is thick, hearty, and packed with protein. Made with ground bison, beans, and vegetables, it’s easy to cook on the stovetop or in a slow cooker. Warm, comforting, and full of flavor for any dinner.

Ingredients
  

  • 1.5 pounds ground bison
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 2 cans 14 oz each diced tomatoes
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup pumpkin puree optional
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup low-sodium beef or vegetable broth
Optional toppings: shredded cheese, sour cream, chopped green onions

Method
 

  1. Stovetop Method
  2. Heat a large pot over medium heat. Add the ground bison and cook until browned, breaking it into small pieces.
  3. Add diced onions and garlic. Cook until softened and fragrant, about 3-4 minutes.
  4. Stir in red and green bell peppers. Cook for 2 minutes.
  5. Add diced tomatoes, kidney beans, black beans, pumpkin puree (if using), and spices. Mix well.
  6. Pour in the broth, bring to a simmer, then reduce heat to low. Cover and cook for 25-30 minutes, stirring occasionally.
  7. Taste and adjust seasoning as needed. Serve hot with toppings.
  8. Crockpot / Slow Cooker Method
  9. Brown bison in a skillet for better flavor.
  10. Add all ingredients to the slow cooker.
  11. Cook on low for 6-8 hours or high for 3-4 hours.
  12. Stir occasionally, taste, and adjust seasoning before serving.

Notes

  • You can adjust the spice level to taste by adding more or less cayenne pepper.
  • Let the chili rest for 10 minutes before serving; it will taste even better.
  • Optional pumpkin puree adds a creamy texture and subtle sweetness.
