Ingredients
  

  • 1 ½ cups low-fat cottage cheese
  • ½ cup Greek yogurt
  • ½ cup shredded cheddar cheese or queso cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder optional
  • 1 small jalapeño finely diced (optional)
  • Salt and pepper to taste
  • Fresh herbs cilantro or parsley for garnish

Method
 

  1. Blend the Base: Add cottage cheese and Greek yogurt into a blender or food processor. Blend until smooth. For a chunkier texture, pulse a few times.
  2. Add Cheese: Stir in shredded cheddar or queso cheese until fully incorporated.
  3. Add Spices: Mix in garlic powder, smoked paprika, chili powder, and diced jalapeño. Season with salt and pepper to taste.
  4. Chill (Optional): Refrigerate for 30–60 minutes for flavors to blend and texture to firm up slightly.
  5. Serve: Scoop with tortilla chips, vegetable sticks, or use as a taco dip. Garnish with fresh herbs and optional drizzle of olive oil.

Notes

  • Can adjust spiciness by adding or removing jalapeño or chili powder.
  • Store in the fridge for up to 3–4 days in an airtight container.
  • Works well as a spread on sandwiches, a dip for veggies, or a creamy addition to baked potatoes.
  • Full-fat cottage cheese can be used for a richer taste.
