Ingredients
  

  • 1 cup rolled oats
  • 1 scoop protein powder whey or plant-based
  • 1 tsp baking powder
  • Pinch of salt
  • 1 cup milk or non-dairy alternative
  • 1 large egg or flax egg for vegan option
  • 1/2 cup chopped strawberries plus extra for topping
  • 1 tbsp honey or maple syrup optional
  • 1 tsp vanilla extract

Method
 

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Mix oats, protein powder, baking powder, and salt in a large bowl.
  3. In another bowl, whisk milk, egg, sweetener, and vanilla extract.
  4. Combine wet and dry ingredients until well mixed.
  5. Fold in the chopped strawberries.
  6. Pour the mixture into the prepared dish and top with additional strawberries.
  7. Bake for 25–30 minutes, until the top is golden and a toothpick comes out clean.
  8. Let it cool slightly, then serve warm with optional toppings like yogurt or nut butter.

Notes

For a creamier texture, you can blend the oats before mixing them into the wet ingredients. You can also substitute the strawberries with other fruits such as blueberries or bananas for a variation in flavor. This recipe can be made in advance and stored in the fridge for up to 5 days or frozen for longer shelf life.
