Prep and Filling
- Heat the oven to 190C/375F. Butter a 23 cm / 9-inch square baking dish.
- In a large bowl, toss the sliced peaches with coconut sugar, cornstarch, lemon juice, vanilla, cinnamon, and salt until evenly coated.
- Pour the peach mixture into the prepared baking dish and spread into an even layer.
Topping and Baking
- In a separate bowl, whisk together the oats, almond flour, coconut sugar, baking powder, cinnamon, and salt.
- Add the cold cubed butter and cut it in with your fingers or a pastry cutter until the mixture looks like coarse, pea-sized crumbs.
- Stir in the cold milk just until the mixture forms shaggy clumps. Don't overmix or the topping turns dense.
- Drop the topping over the peaches in clumps, leaving small gaps so the filling can bubble through.
- Bake for 40 to 45 minutes, until the topping is golden brown and the filling bubbles thickly around the edges.
- Cool in the dish for 10 minutes before serving so the filling has time to set.
Notes
- Use ripe but firm peaches, overripe fruit turns mushy once baked.
- Don't skip the resting time, the filling needs it to set.
- Cut butter in by hand for the best crumbly texture.
