Keto Bacon-Wrapped Asparagus Bundles, Oven-Baked

Asparagus spears bundled in bacon and baked until the bacon crisps and the spears turn tender, a simple 5-ingredient low-carb side.

Ingredients
  

  • 24 asparagus spears spears (about 450 g); woody ends trimmed
  • 8 slices bacon (about 280 g); regular cut, not thick-cut
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes optional
  • 1 lemon , cut into wedges; for serving

Method
 

  1. Heat the oven to 200 C / 400 F. Line a 33 x 46 cm / 13 x 18 inch sheet pan with foil.
  2. Snap the woody ends off each asparagus spear by bending it near the bottom until it breaks naturally.
  3. Toss the asparagus spears in a mixing bowl with the olive oil, garlic powder, and black pepper until coated.
  4. Divide the asparagus into 8 bundles of 3 spears each.
  5. Wrap one slice of bacon around each bundle in a spiral, stretching it slightly so it clings tight, and place seam-side down on the pan.
  6. Space the bundles at least 1 inch apart on the pan so the bacon crisps instead of steaming.
  7. Bake for 20 to 25 minutes, flipping the bundles halfway through, until the bacon is crisp and browned and the asparagus tips are tender.
  8. Broil for 1 to 2 minutes at the end if the bacon needs more color, watching closely so it doesn't burn.
  9. Let the bundles rest on the pan for 3 minutes, then sprinkle with red pepper flakes and serve with lemon wedges.

Notes

  • Use standard-cut bacon, thick-cut won't crisp before asparagus overcooks.
  • Space bundles apart on the pan, crowding steams the bacon.
  • Snap asparagus ends by hand for the natural breaking point.
  • Broil briefly only if bacon needs more color.
