Ingredients
  

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil or avocado oil
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons butter
  • 3 cloves garlic minced
  • 1/4 cup fresh lemon juice about 2 lemons
  • 1 teaspoon lemon zest
  • 1/2 teaspoon dried thyme or Italian seasoning
  • Fresh parsley chopped, for garnish

Method
 

  1. Prep the chicken: Pat the chicken dry with a paper towel. Season both sides with salt and pepper.
  2. Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5–6 minutes per side until golden and fully cooked. Remove from skillet and set aside.
  3. Make the sauce: Lower heat to medium. Melt butter in the same skillet and sauté garlic for 30 seconds. Add heavy cream, parmesan, lemon juice, lemon zest, and thyme. Stir until slightly thickened, about 3–4 minutes.
  4. Combine chicken and sauce: Return chicken to the pan and spoon sauce over the pieces. Let simmer for 1–2 minutes to let flavors meld.
  5. Serve: Plate chicken, drizzle extra sauce on top, and sprinkle with parsley. Serve with zucchini noodles, cauliflower rice, or a salad.

Notes

  • Chicken thighs can be used instead of breasts for juicier meat.
  • Fresh lemon juice gives the best flavor.
  • Reheat gently if storing leftovers to prevent the sauce from curdling.
