Method
- Preheat & Prep: Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a food processor, combine almond flour, coconut flour, baking powder, and a pinch of salt.
- Melt & Blend: Melt the mozzarella and cream cheese in the microwave (30-second increments), then mix into the dry ingredients.
- Add Eggs & Combine: Add two eggs and blend until a smooth dough forms.
- Shape Buns: Divide the dough into 8 equal parts and shape them into 5-inch-long buns.
- Egg Wash: Beat the remaining egg and brush it over the buns for a golden finish.
- Bake: Bake for 22-25 minutes or until firm and golden brown.
- Cool & Serve: Let the buns cool before slicing.
Notes
Replace part of the almond flour with arrowroot powder for a lighter crumb. Swap mozzarella for provolone or cheddar if needed. Store in the fridge for 5 days or freeze for up to 2 months. Microwave for 20 seconds or toast for a crispier texture.
