Layered Matcha Coconut Yogurt Cups with Toasted Coconut

Ingredients
  

Yogurt Base
  • 480 g coconut yogurt, plain full-fat / 2 cups; thick, unsweetened
  • 3 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 2 tsp matcha powder cooking-grade, not ceremonial
  • 2 tbsp warm water for blooming the matcha
Toppings
  • 100 g granola, gluten-free / 1 cup
  • 150 g mango, diced / 1 cup; fresh or thawed frozen
  • 15 g unsweetened coconut flakes / 3 tbsp; toasted
  • 12 g chia seeds / 1 tbsp; optional

Method
 

  1. Toast the coconut flakes in a 20 cm / 8-inch skillet over medium heat for 2 to 3 minutes, stirring often, until golden. Transfer to a plate to cool.
  2. In a small bowl, whisk the matcha powder with the warm water until smooth with no clumps remaining.
  3. In a mixing bowl, stir together the coconut yogurt, maple syrup, and vanilla extract until combined.
  4. Scoop half the yogurt mixture into a separate bowl and set aside, this will be your plain layer.
  5. Whisk the matcha paste into the remaining yogurt mixture until you get an even green color, this is your matcha layer.
  6. Spoon a layer of plain yogurt into the bottom of each of 4 jars or cups, dividing evenly.
  7. Add a spoonful of granola on top of the plain yogurt in each cup.
  8. Spoon the matcha yogurt over the granola, dividing evenly among the 4 cups.
  9. Top each cup with diced mango, toasted coconut flakes, and a sprinkle of chia seeds.
  10. Cover and chill for at least 10 minutes before serving, or store up to 2 days.

Notes

  • Whisk matcha with warm water before adding to yogurt to avoid clumps.
  • Toast coconut flakes over medium heat and stir constantly, they burn quickly.
  • Add granola right before eating if prepping more than a day ahead.
  • Use full-fat coconut yogurt so the layers hold their shape.
