Ingredients

  • 1 pound fresh asparagus
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 lemon zest and juice
  • Salt and black pepper to taste
  • 2 tablespoons grated Parmesan cheese optional
  • Pinch of crushed red pepper flakes optional

Method

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Trim the asparagus. Snap off the tough ends — they’ll naturally break where the tender part begins.
  3. Season the asparagus. Place the spears on the baking sheet. Drizzle with olive oil, then add minced garlic, lemon zest, salt, and pepper. Toss until everything is evenly coated.
  4. Roast the asparagus. Bake for 12–15 minutes, depending on thickness. The tips should turn golden and slightly crisp.
  5. Finish with lemon juice. Once roasted, squeeze fresh lemon juice over the asparagus. Sprinkle Parmesan or red pepper flakes if you like a little heat or extra flavor.
  6. Serve warm. Enjoy as a side dish with chicken, fish, pasta, or even eggs.

Notes

  • Use fresh, firm asparagus for the best texture. Avoid limp or dull stalks.
  • If your asparagus is thick, add 2–3 minutes to the roasting time.
  • For a richer flavor, toss in a teaspoon of melted butter before serving.
  • Want a vegan twist? Skip the cheese and sprinkle some nutritional yeast instead — it gives a lovely cheesy flavor.
  • Serve immediately; roasted asparagus tastes best fresh out of the oven.
