Light Roasted Pumpkin Puree Bowl

This light roasted pumpkin puree bowl is smooth, warm, and comforting without feeling heavy. Roasting the pumpkin brings out deep flavor, while garlic and spices keep it cozy. It works as a bowl on its own or as an easy pumpkin soup base.

Ingredients
  

  • 1 small sugar pumpkin about 3–4 lb
  • 1 tablespoon olive oil
  • 1 small onion sliced
  • 3 garlic cloves skin on
  • Salt to taste
  • Black pepper to taste
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • 2 –3 cups warm vegetable stock
Optional: splash of cream or coconut milk

Method
 

  1. Heat your oven to 400°F (200°C).
  2. Cut the pumpkin in half and scoop out the seeds. Slice into thick wedges.
  3. Place pumpkin, onion, and garlic on a baking tray.
  4. Drizzle with olive oil. Sprinkle with salt and black pepper.
  5. Roast for 35–40 minutes, flipping once, until soft and lightly browned.
  6. Let cool slightly. Peel off the pumpkin skin.
  7. Add pumpkin, onion, and squeezed garlic to a blender.
  8. Add smoked paprika, cumin, and 2 cups warm stock.
  9. Blend until smooth. Add more stock if needed.
  10. Taste and adjust salt. Add cream or coconut milk if using.
  11. Serve warm as a bowl or thin it further for soup.

Notes

  • Sugar pumpkin or kabocha works best for flavor and texture.
  • Roasting is key. Don’t rush it.
  • This puree thickens as it cools, so thin it when reheating.
  • Great for meal prep and freezes well.
