Method
- In a large bowl, mix oats, protein powder, matcha powder, and chia seeds.
- Add nut butter, honey (or maple syrup), and vanilla extract. Stir until well combined.
- If the mixture is too dry, add water one tablespoon at a time until it holds together.
- Roll the mixture into small bite-sized balls.
- Place on a tray and refrigerate for at least 20 minutes to set.
- Enjoy immediately or store in an airtight container in the fridge for up to a week.
Notes
For a nut-free version, use sunflower seed butter. Want extra crunch? Add some crushed nuts or cacao nibs. You can freeze them for up to a month—just let them thaw for a few minutes before eating!
