Ingredients
  

  • 1 cup rolled oats
  • ½ cup nut butter almond, peanut, or cashew
  • ¼ cup honey or maple syrup
  • 1 scoop vanilla protein powder
  • 1 tablespoon matcha powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons chia seeds optional
  • 1 –2 tablespoons water if needed for consistency

Method
 

  1. In a large bowl, mix oats, protein powder, matcha powder, and chia seeds.
  2. Add nut butter, honey (or maple syrup), and vanilla extract. Stir until well combined.
  3. If the mixture is too dry, add water one tablespoon at a time until it holds together.
  4. Roll the mixture into small bite-sized balls.
  5. Place on a tray and refrigerate for at least 20 minutes to set.
  6. Enjoy immediately or store in an airtight container in the fridge for up to a week.

Notes

For a nut-free version, use sunflower seed butter. Want extra crunch? Add some crushed nuts or cacao nibs. You can freeze them for up to a month—just let them thaw for a few minutes before eating!
