Method
Cook the vegetables
- Heat a pan over medium heat with a splash of oil. Add the diced onion and bell pepper. Cook until they soften.
Add garlic
- Stir in the garlic and cook for about 30 seconds until fragrant.
Add mushrooms
- Add the chopped mushrooms. Let them cook until they release their moisture and turn darker. Don’t rush this step. It adds flavor.
- Mix in tomato paste and spices
- Stir in the tomato paste. Add smoked paprika, chili powder, onion powder, and garlic powder.
Add liquids
- Pour in the crushed tomatoes, maple syrup, soy sauce, vegan Worcestershire, and broth or water. Mix well.
Add lentils
- Add the cooked or canned lentils. Stir everything together and bring it to a gentle simmer.
Thicken the sauce
- Cook for 8–10 minutes or until the mixture thickens. Taste and adjust seasoning.
Assemble
- Spoon the filling onto toasted buns. Eat warm.
Notes
If the mixture gets too thick, add a splash of water. If it feels too thin, let it simmer a few extra minutes. Toasting the buns makes a big difference, so don’t skip it. Leftovers taste even better the next day.
