Method
Brew the Coffee
- Brew 240 ml strong espresso or coffee and let it cool to room temperature. Stir in the rum or coffee liqueur if using.
Make the Mascarpone Cream
- In a large bowl, beat the mascarpone, powdered erythritol, vanilla, and salt with a hand mixer on medium speed for 1 minute until smooth.
- In a separate bowl, whip the cold heavy cream on high speed for 2 to 3 minutes until stiff peaks form.
- Fold the whipped cream into the mascarpone mixture in two additions, using a rubber spatula, until no white streaks remain and the cream holds its shape.
Assemble the Cups
- Dip each ladyfinger half in the cooled coffee for 1 to 2 seconds per side, any longer and they turn soggy, then layer them in the bottom of 6 cups or jars (200 ml each).
- Spoon or pipe a layer of mascarpone cream over the ladyfingers, spreading to the edges.
- Repeat with a second layer of dipped ladyfingers and another layer of cream, finishing with cream on top.
Chill and Serve
- Cover each cup and refrigerate for at least 4 hours, or overnight, until the layers set and the flavors meld.
- Dust the tops with unsweetened cocoa powder through a fine-mesh sieve just before serving. Add chocolate shavings if using.
Notes
- Use powdered sweetener, not granular, so the cream stays smooth
- Dip ladyfingers fast, don't soak them
- Chill at least 4 hours before serving for clean layers
- Swap in gluten-free ladyfingers if needed
