Okra Chips: Crispy, Cornmeal-Coated Air Fryer Snack

Ingredients
  

  • 450 g fresh okra sliced into 1.3 cm / 1/2-inch rounds, patted dry
  • 1 tbsp olive oil
  • 2 tbsp cornmeal, fine
  • 1 tbsp cornstarch
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt plus more to taste
  • 1/4 tsp black pepper
  • avocado oil cooking spray as needed; for the basket

Method
 

Prep the Okra
  1. Wash okra pods and dry them completely with a kitchen towel. Leftover surface moisture is the biggest reason okra chips turn soggy instead of crisp.
  2. Trim the stem ends and slice okra into 1.3 cm / 1/2-inch rounds.
  3. Toss the sliced okra with olive oil in a mixing bowl until evenly coated.
  4. In a small bowl, mix cornmeal, cornstarch, garlic powder, smoked paprika, salt, and black pepper. Sprinkle over the okra and toss until every piece is coated.
Air Fry the Chips
  1. Preheat the air fryer to 200°C / 400°F for 3 minutes.
  2. Spray the basket lightly with avocado oil, then spread half the okra in a single layer, leaving space between pieces. Cook in two batches so the basket isn't crowded.
  3. Air fry for 10 to 12 minutes, shaking the basket at the halfway point, until the edges are golden brown and crisp.
  4. Repeat with the second batch, checking a minute or two early since a warm basket cooks faster.
  5. Season hot chips with a pinch more salt if needed and serve right away.

Notes

  • Dry okra completely before coating or chips will steam instead of crisp.
  • Work in two batches so the basket isn't crowded.
  • Shake the basket halfway through for even browning.
  • Salt the chips the moment they come out hot.
