Ingredients

  • 200 g frozen pineapple chunks about 1.5 cups
  • 60 g fresh baby spinach, loosely packed about 2 large handfuls
  • 8 leaves fresh basil leaves sweet basil, not Thai basil
  • 1 medium ripe banana, frozen and broken into chunks about 100 g peeled
  • 240 ml coconut water or plain water, almond milk, or oat milk
  • 1 tbsp fresh lime juice from about half a lime
  • 1 tsp honey or agave syrup optional, only if pineapple is not very sweet

Method

  1. Pour the coconut water into the blender first, then add the fresh spinach and basil leaves.
  2. Blend on high for 20 seconds until the greens are fully broken down and the liquid looks smooth and uniformly green.
  3. Add the frozen pineapple chunks, frozen banana pieces, and lime juice.
  4. Blend on high for 45-60 seconds until the smoothie is thick, creamy, and no frozen chunks remain. Scrape down the sides with a spatula if needed.
  5. Taste and add honey or agave if your pineapple needs a little lift. Blend for 5 more seconds.
  6. Pour into two glasses immediately and serve with a fresh basil leaf on top if you like.

Notes

For the best texture, make sure both the pineapple and banana are frozen solid before blending. Fresh fruit versions work but produce a noticeably thinner smoothie.
