Ingredients
  

Slaw
  • 300 g green cabbage thinly sliced
  • 200 g purple cabbage thinly sliced
  • 100 g carrots grated
  • 200 g fresh pineapple diced small, drained
  • 1 tbsp fresh ginger grated
  • 2 green onions thinly sliced
  • 1/4 cup fresh cilantro chopped
  • 1 tbsp toasted sesame seeds
Turmeric Lime Dressing
  • 3 tbsp fresh lime juice
  • 1 tbsp rice vinegar
  • 3 tbsp olive oil
  • 1 tbsp honey
  • 1/2 tsp ground turmeric
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper

Method
 

Make the Dressing
  1. Whisk the lime juice, rice vinegar, olive oil, honey, turmeric, salt, and pepper together in a small bowl until the turmeric fully dissolves and no yellow clumps remain.
Build the Slaw
  1. Slice the green and purple cabbage as thin as you can and pile it into a large mixing bowl.
  2. Grate the carrots and add them to the bowl.
  3. Dice the pineapple small and pat it dry with a paper towel before adding it in, this keeps the slaw from turning watery.
  4. Add the grated ginger, green onions, and cilantro to the bowl.
  5. Pour the dressing over the slaw and toss well with tongs until every piece is coated.
  6. Cover and chill for 15 minutes so the flavors meld and the cabbage softens just slightly, without going soggy.
  7. Sprinkle the sesame seeds over the top right before serving and give it one more light toss.

Notes

  • Drain excess pineapple juice before adding it to the bowl to avoid a watery slaw.
  • Slice cabbage thin with a sharp knife or mandoline for the best texture.
  • Chill for 15 minutes only, longer and the cabbage loses its crunch.
  • Add sesame seeds right before serving so they stay crisp.
